This single origin decaf from Legado Coffee Roasters originates in Honduras but is then treated using the patented Swiss Water process to remove almost all traces of caffeine. It is a chemical free decaffeination that preserves as much flavour of the original coffee as possible and doesn't add anything undesirable or artificial to the taste.
What's left behind in this particular coffee is a classic profile with lots of chocolate & nutty notes, as well as a bit of brightness that reminded us of citrus in some cups. These characteristics make it a great espresso or moka pot coffee, and for filter style brews, we got tasty results in our Aeropress.

The decaffeinating process presents something of a mystery to most folk, especially as it seems a bit too good to be true. This great decaf coffee does nothing to dispel that myth, as it uses the rather fairytale-esque Swiss Water Process Decaffeination. Swiss Water Process uses the elements of water, temperature and time to create some of the most intriguing decaf coffee. First, we start with small batches of amazing coffee and green coffee extract. Then we add local water and a dash of loving attention by monitoring time and temperature until the coffee is 99.9% caffeine free. It is a completely chemical-free method, and produces a delicious cup.
