Costa Rica is one of the most celebrated coffee-producing countries in Central America. It has a long history of coffee cultivation and has been a popular choice among single origin coffee lovers for decades. Its coffees have a flavour backbone that is easy to recognise with lots of nutty notes and full bodies.

This particular Costa Rican coffee from our friends at Rosetta Roastery definitely has that flavour backbone but with lots of delicious nuance. It's very sweet when brewed correctly and the taste sometimes reminded us of sesame seeds. In an inverted Aeropress, we also found some mouth-watering red cherry flavours.

These flavour characteristics may result (at least in part) from the Red Honey processing method, an increasingly popular hybrid between washed and natural processing where the beans get some fruit contact in drying. While lovers of progressive profiles will certainly enjoy it, we think this coffee will also appeal to those with classic palates.

Sure, she looks sweet now, but they’re lethal by eight months of age. These so-called “six-foot turkeys” are strong and fast, with exceptional balance. They’ll slice you open and spill your guts like red cherry jam. You’re still alive when they start to eat you. So have a little respect.

A coffee of this calibre needs little more than a gentle push into the limelight, before she puts on a magnificent show. As a result, we are happy to roll back off the heat fairly early on, and keep development time a little shorter than some of our other coffees.

In 2013, the first year that Farmer Oldemar Arrieta tested the “Red Honey” process on his Villa Sarchi harvest, the resultant coffee placed first in the Costa Rican leg of the Cup of Excellence competition – arguably the most prestigious award in specialty coffee. Since then he has been honing his process and improving efficiency of both the drying and milling phases, leading to a coffee that is truly representative of the “Micromill Revolution” that has driven Costa Rica to the forefront of specialty coffee on a global level.
