This coffee comes from Finca El Tambor in Guatemala, a farm with quite a few interesting stories to tell. Although Victor Calderon, the owner, is a 5th generation coffee farmer, he only bought this particular farm in 2001. It was previously growing Robusta, but he wanted to turn it into an Arabica farm. Fast forward to 2021, and Calderon's crops from Finca El Tambor have won multiple Cup of Excellence competitions, making it one of the top farms in the country.
Despite its success, El Tambor is a relatively small operation. Victor Calderon runs it with 8 full time employees who live there and also grow their own vegetables on land he has provided for them. Half the farm has been left under forest and set aside as a conservation area. During picking season, 25 seasonal workers join them to help with the harvest.
Finca El Tambor is managed sustainably and with innovation. One great example of this is the way that Victor Calderon has managed coffee leaf rust, a common but devastating fungus that frequently destroys coffee crops around the world. Rather than use large amounts of chemical fungicides (which is the most common approach), Calderon has created his own more environmentally friendly solution to the problem. By mixing highly alkaline clay from the surrounding areas with water and just a small amount of copper-based fungicide, and regularly spraying the under-side of his coffee plants' leaves (the side responsible for respiration), he has managed to control the disease with minimal use of chemicals. This protects the environment, his workers and us, the drinkers of his coffees.
We're excited to try this crop from a prestigious and pioneering farm, from one of the most respected coffee-producing countries. As a 100% Bourbon, full washed lot, it should offer a great way to experience Guatemalan specialty coffee at its best.
Phaedon's tasting notes
Pleasant, easy, comforting, classic - these are the adjectives that come to mind when I sip on a cup of this coffee. There's nothing loud about; it's elegant, refined, perhaps even a little understated. I personally need to drink a coffee like this regularly. It's a great reminder that it's not all about zingy acidity and wild fermented fruit flavours. There's pleasure to be found in something smooth, silky, and in this particular case, chocolatey and nutty with a lovely creamy mouth feel. I particularly enjoyed this coffee in my moka pot and AeroPress.
