Rosetta Roastery are known for their wonderful Ethiopian offerings. Their Yirgacheffes in particular are among our customers' favourites, and also very near and dear to our hearts. They tend to be archetypal, washed, delicate floral affairs - appreciated for their elegant tea-like qualities. This Ethiopian offers something completely different.
Sasaba is a naturally-processed coffee, which means the beans were dried in their fruit rather than stripped of it before drying. This way of processing imparts more body, sweetness and fruitiness, and this is clearly evident in the cup.
Sasaba natural is wonderfully sweet - almost syrupy. It's bursting with jammy fruit flavours, particularly of the stone fruit variety to our palate. In some cups, it tastes like you're biting into a very ripe peach. In others, you get a bit more in the way of tangy berries.
Sasaba's acidity is relatively muted, so we found the most enjoyment in paper or cloth filtered brew methods that turned up the acidity a little bit. It's absolutely stunning in a pour-over or siphon.

Roaster's Notes: Natural coffees are just like millennial creatives; hugely expressive and flamboyant, but really don’t cope well when you turn up the heat. We approach first crack as slowly as is possible without stalling the roast. Development time is relatively short.
Tsegay Hagos Tesfaye and his team run the Sasaba Washing Station, on the border of the Guji and Gedeo Zones. They ensure they work closely with the most experienced farmers in the area, who are well trained and have a track record of providing the best quality cherries - as a result the farmers can earn a premium for their produce.
Sasaba has produced some of Ethiopia's top scoring natural processed coffees this year - which is becoming a bit of a habit! We're excited to present a natural coffee that has the overt fruitiness we enjoy, whilst maintaining balance and crispness.
