Over the last decade, however, a growing movement of innovative local producers has shifted Colombia's coffee narrative from traditional to cutting-edge and process-driven.\u003c\/p\u003e\n\u003cp\u003eFounded in 2018 in the Palestina region of Huila, El Puente Micromill was established to process larger volumes than individual farm mills, to enable smallholder producers to sell ripe cherries at premium prices. Serving over 100 farming families, El Puente takes its name, 'The Bridge' from the footbridge that connects nearby growers to its central mill and the greater, global specialty market.\u003c\/p\u003e\n\u003cp\u003eHistorically, individual producers lacked the resources for experimental processing. El Puente removes that barrier by paying its partners premium prices upfront and assuming the processing risk itself. This lot underwent meticulous sorting, sealed anaerobic fermentation, and slow, parabolic sun-drying. The facility works with coffee from more than 100 smallholder families in the surrounding area, allowing producers to process and deliver their coffee at a scale that wouldn't be possible on their individual farms.\u003c\/p\u003e\n\u003cp\u003e\"Once the cherries arrive, they're floated to remove impurities and then assessed for Brix levels.
