The El Puente Mill is a name worth remembering. We've been lucky enough to taste a few great coffees processed there. It is located in the Palestina region of Huila, Colombia, an area known for producing some of the country's best specialty coffees. Given that Colombia as a whole has such a strong reputation in the world of coffee, this makes Huila an important region on a global scale.

The El Puente Mill has embraced variety and innovation in its approach to processing, and our friends at Cedar have taken advantage of this to offer us quite a tasting opportunity. This particular coffee is a washed lot, which you could call the most well-established processing method for specialty coffees. That means that it was fermented and the fruit removed before drying. Typically, washed coffees benefit from more cup clarity and higher acidities.

While this coffee would be well worth enjoying on its own, you may get even more out of it by comparing it to its natural and honey counterparts which are also available. Having two coffees from the same region to compare is already special, but having three almost identical lots, different only in their processing method is quite something. We would encourage you to try them all!

Phaedon's tasting notes

This washed lot was not quite what I was expecting. I would have thought it would be on the brighter end in terms of acidity, but it really isn't. It's decidedly mellow, in a way that will likely please more traditional coffee palates. Its flavours are also of the traditional variety, primarily nuts and chocolate, with a creamy body. Occasionally I picked up a little bit of orange acidity, but it was relatively muted.

I had the best results with this coffee in espresso-like brews such as a moka pot, but also in a French press and an AeroPress. For these brew methods and traditional espresso, you're bound to enjoy this coffee if you like something subtle and comforting.

El Puente (meaning bridge) is named after the footbridge over the river near the new El Puente processing facility. This facility in the Palestina region of southern Huila processes coffee from small surrounding farms, of over one hundred families, who produce coffee on their farms and deliver it to El Puente, which is designed to handle larger volumes of coffee than the mills on individual farms can process.

El Puente receives the cherries from the producers that are selected by some areas, depending on the profiles and whether the cherries are in the correct maturation for the blend. The next step is the floating process and to measure the Brix degrees in order to determine the hours of fermentation. Then the de-pulping process takes place and the beans are deposited in tanks for 30 to 42 hours. After fermentation, the beans are washed and go to their drying process that lasts about 15 to 18 days in the sun in parabolic dryers.
