This limited release microlot from Legado is a particularly special coffee. It was grown on a small farm in the San Fernando municipality in Nueva Segovia, Nicaragua. Julio Peralta, the owner is passionately dedicated to sustainability, and most of his land is actually devoted to wild forest, with 42 hectares growing coffee. Electricity is provided by solar panels and hydro generators connected to water collection facilities, and the coffees are pulped using a new generation of eco-pulper.
Given the sustainable principles, it should be no surprise that it's a natural-processed coffee, meaning that much less water was required in its preparation. Perhaps even more importantly, that natural processing has imparted some sublime flavour qualities. It is a wonderfully sweet coffee, with a present but well-integrated acidity that reminded us of dried fruit like mango, and sometimes of raw honey. This is accentuated by some delicate florals, and there is a sweet nutty finish that might remind you of peanut or cashew-nut butter. This is a try it once coffee, but we'd recommend you don't pass up that chance!
