Brazil is the world's largest coffee producer. While the bulk of its exports are commodity-grade coffee, some of its speciality coffees are not to be missed. Fortunately for us, our friends at Origin Coffee Roasting have always done a phenomenal job of finding and sharing some of the country's very best.
This coffee is part of a particular unique coffee-tasting opportunity. Quite unusually for Brazil, it's a natural-processed lot (rather than the more typical pulped natural) and it's also one of two lots that Origin have sourced from the same farm, offering a wonderful chance to really understand the impact of variety on flavour.
This Icatu lot is delicious but still quite different from its Bourbon counterpart. We found that this one enjoyed longer extraction times and immersion-type brews. At its best, in a Chemex or French press, its nutty flavours and creamy body reminded us of macadamia nut butter.
