Specifically, this coffee goes through an extended fermentation, where freshly pulped beans are added to the fermentation tank each day for 3-5 days, raising the pH and allowing for a longer fermentation.
Origin's roast profile has revealed some subtle stone fruit and a candy-like sweetness that we particularly enjoyed in a French Press. It has a very full body, and smoky quality that hints at molasses.
