Living up to the country's reputation for sophisticated production, this particular Colombian single origin uses a fairly innovative processing technique to ensure high quality and consistency. Specifically, this coffee goes through an extended fermentation, where freshly pulped beans are added to the fermentation tank each day for 3-5 days, raising the pH and allowing for a longer fermentation.
The result is typical of Colombian washed coffee in that it is flavourful, full-bodied, balanced and naturally sweet, but it also seems to have some of the flavour notes that you might find from a natural-processed coffee. Specifically, it has a creamy body and tangy/malty characteristic that lovers of naturals should thoroughly enjoy.
Origin's roast profile has highlighted some delicious stone fruit and black grape flavours, as well as hints of tangy berry jam and even some tropical fruit. A wonderful fermented quality pervades all of this basket of fruit flavours, and the creaminess sometimes even reminded us of a white chocolate. This is a very versatile coffee that should be enjoyable in any manual brew method. We particularly loved it in a siphon, Aeropress or pour-over brew.
