Origin Coffee Roasting does an amazing job of sourcing and roasting top quality and delicious coffees from all around the globe, including many rare & unique examples. This coffee has us particularly excited because it is very uncommon to find naturally processed coffees from Colombia.

The Santa Barbara estate consists of five farms that span three regions and has been run by Pedro Echavarria and his family since the 1980s. Although the Santa Barbara estate has always had a good reputation for producing great quality coffee, it wasn’t until more recent years when Pedro’s son, also Pedro, became more involved in the workings of the estate’s farms, that they began experimenting with progressive ideas and processes. Pedro Jr was particularly interested in natural processing methods and began conducting experiments. These experiments, along with Pedro Jr’s creativity and scientific curiosity, took Santa Barbara’s already great quality coffee to new heights. They have since set up a research lab where they can trial and develop new farming practices and processing methods.

It's a really wonderful thing when unique and unusual coffees are also just plain delicious. It provides for a lot of different ways to enjoy the same cup. A natural-processed Colombian is a rare find, and that in itself makes this a coffee I was excited to try, but it only would have taken a sip for this coffee to capture my attention; it is a real standout in terms of flavour.

The coffee is absolutely bursting with fruit flavours and aromas. They hit my olfactory senses as soon as I opened the bag. There are definite red berry notes in this coffee: I detected raspberries in some cups, and strawberry flavours appeared in most of my brews. Combined with the candy-like sweetness and quite a syrupy full body, I was occasionally reminded of a strawberry Sugus sweet while enjoying my sample bag, if you'll permit me the esoteric reference.

This coffee is not just berries and candy though. It's much more complex than that. I was really surprised by the bright, dazzling, occasionally downright sparkling acidity that I found in many cups. That wasn't what I expected from a natural which already has so much sweetness. While usually this acidity reminded me of raspberries, sometimes it tasted more like blackcurrant, Ribena in fact. Some cups also took on a tropical flavour. Melons, guavas and even paw paws all came to mind at some point in my adventures with this coffee.

Needless to say, I'm already incredibly fond of this coffee. Not only is it mouth-wateringly delicious and unusual, I even found it quite forgiving in terms of brewing parameters and methods. It shone in brews with all my coffee toys. You're making a big mistake if you don't try at least one bag. I reckon you'll be back for another soon afterwards.
