Long time Origin fans like us will recognise the name Finca Veracruz with excitement. Our friends at Origin have purchased beans grown and produced by the Echavarria family many times over the last few years. They never disappoint, and yet, they seem to offer something different with each new crop.
This family-run farm uses an innovative processing method, inspired by the practices of smaller scale Colombian coffee farmers, but refined for production at scale. It involves adding freshly pulped beans to the fermentation tank every day, raising the pH level and thereby controlling and lengthening the fermentation process while avoiding any of the harsher-tasting byproducts of fermentation in a highly acidic environment. The lot represents 3-5 days worth of pickings, and then is dried in a fairly traditional fashion on raised beds.
The Estate employs 60 people all year round, all of whom earn 30% more than the area's minimum wage, as well as employing up to 1,200 temporary workers during harvest. The estate also provides financial aid to assist workers' families in educating their children.
Phaedon's tasting notes
This new lot from Finca Veracruz has certainly brought back fond memories of its predecessors. It is absolutely delightful in all kinds of manual and filter long-style brews, from French press to AeroPress, siphon & pour-over. In the cup it has a delightful dominant orange flavour, accompanied by a deep syrupy sweetness. Sometimes there are also hints of something tropical, mango to my palate, and other times some flavours of stone fruit. In my siphon brew, this all seemed to combine to yield something a bit like a breakfast fruit juice blend. It was truly delicious. Grab a bag while you can.
