Don Claudio Salazar Arias inherited his coffee farm from his father, Don Cristobal, who also taught him about coffee cultivation from a very young age. Having 6 siblings, all of whom were to carry on the family business, Don Claudio only inherited a small piece of land, but he has put it to good work with the help of his wife, who the farm is named after, and his two sons, who have carried on the legacy.
Costa Rica is one of the big names in coffee, so many will want to try this coffee because of its origins alone. However, there are two other facts about this coffee that we think make it even more appealing. For starters, it is 100% Red Catuai, a cultivar that has shown exceptional flavour, in a few different growing regions we've had the privilege to sample of late. Secondly, it's also a Yellow Honey processed coffee, meaning that it was dried with ~50% of the coffee cherry mucilage left in tact, imparting some of the fruit's flavours. Many believe that honey processing is the way of the future, particularly for Central American coffee, offering a great balance of acidity & body, flavour & sweetness.
Our friends at Origin have coaxed some delicious flavours out of this coffee which should make it a treat to enjoy in both manual brew methods and espresso. It has a tangy quality that may remind you of mango, and a darker fruit flavour that is reminiscent of raisins, with a syrupy mouth feel.
