When it comes to coffee origins, we love them all equally, although it might be said that we love some a little more equally than others. Colombian coffees roasted by Rosetta Roastery definitely fall into the category of coffees that we get really excited about.

Colombian coffees tend to get our attention due to their penchant towards sweet and candy-like flavours. Needless to say, we are excited about this one for the flavours as much as we are excited to support the community work being done by this group.

According to Colombian mythology, Madremonte is the Mother Of The Forest, (sometimes called Mother Mountain), a fierce protector of the forest and all the life it holds. The Madremonte Collective is an initiative run by the Coocentral Cooperative that focuses on empowering local woman and improving the lives of them and their families. This is done by offering fair premiums for quality coffee and upskilling women producers in the Huila Region to help maximise their potential. The program has seen incredible success with significant increases in crop yield and quality scores leading to an increase in earnings by female farmers of over 50%. 

Phaedon's tasting notes

This coffee has perplexed me. I know I really enjoy it. I know it's really sweet, clean, balanced and delicious. I know it reminds me of something, but I just can't put my finger on what it is! I don't usually find it too difficult to find flavour descriptors, but somehow this one eludes me. Still, I've decided to think of this challenge as part of this coffee's mystique. It hasn't stopped me from enjoying it, particularly in my Chemex.

Style: Progressive
Flavour profile: Clean, brown sugar sweetness, juicy citrus

We come in with a fairly low drum speed and airflow so as to not strip away too much of the nuance in the drying phasing as we allow heat to penetrate these big, dense beans. A median development allows for mild toasty notes and smooth mouthfeel while preserving that citrus acidity.
