For as long as we've worked with them, Rosetta Roastery have always had stunning coffees to offer from Yirgacheffe in Ethiopia. Their roast style really emphasises all the wonderful characteristics that the region is known for. This one from the Beloya Washing Station has many of those qualities, with plenty of its own unique character to enjoy as well.
The quintessential citrus flavours are very present in this coffee, with bright, sweet lemony notes that we thoroughly enjoyed. It also has some stone fruit flavours in the mix, with some distinct notes of peach shining through in some brew methods. You'll also find some of those tea-like qualities the region is known for in the cup. While it has a pleasant acidity, it is relatively subtle, making the coffee as easy to drink as it is delicious.
We really enjoyed this coffee in every brew method we tried it in, so we'd highly encourage you to try it in any (and every) method you can.
Flavour: Crisp & sweet, with citrus, jasmine and stonefruit notes
While Lake Como is lovely at this time of year, it's always ruined by those horribly gaudy celebrity galas – red carpets, black ties, orange skin. I prefer more elegant thrills; the subtle scent of freshly sliced apricots, a fragrant cup of Earl Grey tea, and the warm citrus scent of marmalade on toast.
What we prize most about coffees from Yirgacheffe are their sensory clarity, sparkling acidity, and explosive floral and fruity aromas. All of these attributes are maximised by a shorter sharper roast profile. With this in mind, we don't dilly dally when roasting our Beloya; just a flash in the proverbial pan, and we're done.
The Kochere District of Gedo, Ethiopia, continues to produce some of the most distinctive and seductive coffees in the world. Most coffee is farmed in a traditional manner by smallholder farmers, who take their picked coffee cherries to the local washing station to be processed. This coffee was selected for the stringent OCR programme, were only ripe cherries make the grade - this adds superb sweetness to the final product.
