We'd never had a Honduran coffee from Rosetta Roastery until this year, and now we have two to enjoy! This one is definitely worth comparing with their fruity, exuberant San Francisco Natural also currently on offer. This is the more sedate, serious and classically-minded compatriot.
In the cup, this is definitely a classic coffee with a full body and mouth feel, and plenty of sweetness. The acidity is quite muted, making it very easy to drink, and it displays some subtle nutty notes. It should please any traditional coffee palates who don't like fruity flavours in their coffee.
Full, creamy texture, with gentle barley candy sweetness
The boy was selling barley candy from a tray. He seemed gentle enough, but one had to wonder what he was going to do with the money, here, in this place. I took one, and shared it with the group. My stomach was empty, but my heart felt a little fuller.
This Catuai lot has an abundantly full body, and relatively gentle acidity, which means that, despite being "classic" in nature, we don't need to push too hard to achieve that balance between roast induced caramel flavours, and the gentle natural sweetness of the coffee.
JR is a farm that has always been tough to grow coffee on, simply because its aspect is all wrong. It struggles to get enough sunlight to produce a great harvest, and yet, through ingenious farming techniques and attention to detail, Marysabel Caballero and her husband Moises have managed to produce ever improving results over the past few years. This lot is evidence of their hard work.
