Although this is our first time having a coffee from Las Lomas at Cape Coffee Beans, many of us have had the pleasure of experiencing their coffees from previous harvests and they blew us away. It's wonderful to now have a chance to try a Las Lomas coffee roasted by Rosetta.
Las Lomas is the newest coffee farm by the Caballero family. Moises And Marysabel Caballero are 2nd and 3rd generation coffee farmers; their pedigree really shows in the quality of the coffees they produce and is backed up by their achievements at past year's Cup of Excellence Awards. Like their parents before them who pioneered coffee farming in Honduras, the Cabelleros are continuing to be pioneers in the Honduran coffee industry, and their commitment to quality has really shown the world what Honduran coffee can be.
Despite only starting three years ago, the Caballeros have quickly mastered the art of natural processing, and ever since they began, they have been producing some of the most exciting natural coffees to come out of Honduras. The Caballero family, like Rosetta Roastery, are constantly pushing the bar in terms of quality and we are very excited to see what happens when they put their skills together.
Phaedon's tasting notes
Raw unfiltered honey - that is what I taste every time I try this coffee, and it keeps me coming back for more. It's that combination of sweet, syrupy and floral with plenty of bright acidity to balance it out. If you've tried fynbos honey, I'm sure you know what I'm talking about. I don't know if I've ever tasted a coffee with quite this flavour profile.
Now, don't get me wrong, there are a lot of other things going on in the cup. This is definitely a complex coffee. Sometimes it has a marzipan-like nutty note; sometimes it finishes with a lingering cocoa flavour; there's even a quirky fermented, boozy note to be found, but every cup was definitely bursting with raw honey sweetness for me. What more could you want?
Flavour profile: Full bodied, sherry, red grape & cocoa nib
With this natural we don’t need to be too forceful, coming in with a fairly low charge and easing off on gas relatively early into the roast. Compared to some of our more explosive washed coffee beans, these enter first crack with a ginger patter. We opt for a short development to preserve as much fruit as possible.
