This coffee is the first in what we hope to be a series of coffees from new and up and coming coffee roasters. It is a wonderful example of natural-processed beans from the Yirgacheffe region, full of fruity flavours and floral aromas that make it perfect for a pour-over. It is also a fantastic introduction to Run Rabbit Run - the passion project of Philip Brink.

About the coffee in the cup

We were lucky enough to taste a few roast profiles of this coffee, all of which were delicious, but the final one which we're excited to share with you should be perfect for those coffee lovers who like a delicate yet flavourful cup. We had very tasty results in most manual brew methods, but were particularly enamoured with the brews in a pour-over and an Aeropress.

The flavours in this coffee are of the archetypal Yirgacheffe variety, despite the fact that it was processed in the less common natural fashion where the coffee is dried in the fruit. Citrus and mellow stone fruit notes are always identifiable in the cup, as well as tea-like and floral aromas. The body is on the lighter side, as is typical of these Ethiopians, but there's plenty of sweetness to underpin all those more complex characteristics.

Note: We find this coffee gets even better with age. Don't drink it all too quickly - give it a couple of weeks and see how the flavours evolve!

About Run Rabbit Run

Run Rabbit Run is the passion project of Philip Brink who developed his love for coffee after a brief foray into the restaurant industry. Phil got his start roasting in his father-in-law's garage and serving espresso-based beverages from a cart in De Waal Park where he started assembling a small group of die-hard fans.

Fast forward a couple of years and Phil's now roasting on a 6kg Genio roaster at his new location at the Bijou Theatre in Observatory, Cape Town where his circle of loyal followers continues to grow.

We've known Phil for quite a while now and are excited to share his infectious passion and curiosity about coffee. We're even more excited to share his first CCB-release - one we know he invested in sourcing and profiling perfectly for our coffee-loving community.
