Origin Coffee Roasting has released a whole variety of delicious Colombian coffees this season, and this is definitely another one worth trying. It was grown on Finca La Julia by brothers Niko and Karo, whose father, Octavio built La Julia in the 1990s. The brothers have committed to sustainability since taking over the farm and achieved Rainforest Alliance certifications. They also have experimented with alternative processing methods, including the one used for this coffee which they call a "semi-washed".
Their semi-washed process involves a combination of aerobic and anaerobic fermentation, as well as mechanical and sun-drying. It is a lengthy controlled process but one that they feel accentuates all the flavours of the coffee in the cup.
This lot is comprised of the Tabi cultivar which is a cross between Typica, Bourbon & Timor. It is resistant to leaf rust but also has many of the cup quality characteristics of its celebrated parents.
