Costa Rica is one of the most celebrated coffee-producing countries in Central America. It has a long history of coffee cultivation and has been a popular choice among single origin coffee lovers for decades. Its coffees have a flavour backbone that is easy to recognise with lots of nutty notes and full bodies.
This particular Costa Rican coffee from our friends at Rosetta Roastery definitely has that flavour backbone but with a more pronounced acidity than you might expect, given that it was honey-processed. We found hints of lemon and lime and even green apple, all coming together to give it a crisp quality. This is yet another delicious and intriguing Costa Rican to add to Rosetta's recent streak of quality finds from the region. It's surprisingly versatile, and we really enjoyed it in an Aeropress, siphon and all types of pour-over brews.

Gentle at the start, gentle at the finish. There is plenty of sugar in these lovely red honeyed little beauties, so we don't need to work too hard to get those caramel notes to pop, and we don't need to look too hard to find the sweetness necessary to balance the natural acidity.
