For as long as we've worked with them, Rosetta Roastery have always had stunning coffees to offer from Yirgacheffe in Ethiopia. Their roast style really emphasises all the wonderful characteristics that the region is known for. This one from the Roba Washing Station is a delicious, archetypal example.
The quintessential citrus flavours are definitely present in this coffee, but we definitely wouldn't call it too bright or overly acidic. It's actually quite sweet, and offers a fair bit of body. The flavours sometimes are more reminiscent of stone fruit than citrus, and it's also got a wonderful floral aroma.
To appreciate this coffee at its best, we'd highly recommend trying it as a pour-over, with a longer extraction.
Flavour: Clean & sweet, peach, tea, citrus
Our lightest, and shortest profile. The small beans heat through quickly, so we keep the roast short, and the result is indeed sweet.
