Cedar likes to tout that its decaf options are the kind “you’d actually want to drink, we promise,” and we tend to agree. It’s been a while since we’ve had one on our shelves and we’re happy to see it back. 

Similar to Cedar’s previous decaf release, this is a straightforward, classic Colombian lot. Where it differs is its processing. Cedar’s previous lot was processed via the Swiss Water technique, but this latest release has been processed via chemical-free CO2 decaffeination. 

CO2 decaffeination involves sealing green coffee beans in an “extraction vessel” and soaking them in hot water, causing them to expand and become more porous. This also allows caffeine molecules to diffuse out of the bean and into the water. Liquid CO2 is then pumped into the vessel, where it dissolves the contained caffeine and carries it out as it is circulated through an extractor and scrubber for several hours. This results in decaffeinated green beans with minimal impact on flavour, and, once roasted, a coffee you can enjoy jitter-free at any time of day or night.

“This process is the least invasive method of removing caffeine without changing the flavour profile of the coffee. We picked up notes of Brazil Nuts on both our filter brew and espresso. The espresso does however have a sweeter note of Marzipan which sticks to the theme of nuts very well. This all transforms our milk beverage into this butterscotch sweetness, the closest you'll get to us serving a Butterscotch Latte.”
