Brazil is not typically the origin that specialty coffee lovers get very excited about when it comes to single-origin lots. Brazilian coffees may form the backbone of many of the best blends, but that's because their flavours are predictable, not necessarily exciting. Brazil is also the largest coffee producer in the world, so producing consistent coffee across a spectrum of qualities is what it does best.

Still, Brazil does produce some phenomenal specialty lots; you just have to find them and get a hold of them, a task easier said than done. One of our roasting partners that has always had a knack for this is Rosetta Roastery. Rosetta seems to do particularly well at finding specialty lots from up-and-coming estates, and this one definitely fits that bill.

This coffee hails from Fazenda Jaguara, and it's actually the second lot that our friends at Rosetta have sourced from this estate. For those that remember its predecessor, this should provide an interesting contrast, as the previous lot was an anaerobically processed Arara variety lot, where is this is a classically Brazilian Yellow Catuai pulped natural. This offers an interesting opportunity to sample a classic lot from the same estate that produced a highly progressive lot. Even if you never tasted the last Rosetta Jaguara, this also offers an opportunity to taste archetypal Brazilian specialty coffee.

Having said all that, this coffee is a peaberry lot, which means it's comprised entirely of the naturally occurring round beans that come out of coffee cherries that contain just one seed. That makes these beans a little easier to roast uniformly and should only add to the enjoyable flavour experience.

Classic! That basically sums up this bold Brazilian coffee. Despite a relatively light roast, this coffee offers plenty of body, sweetness and bold nutty flavours. It should be a crowd please, and so far, I've enjoyed it most of all in my AeroPress brews.

Peaberry (PB) lots are a roaster's dream. To dispel a common misconception - peaberry is not a coffee variety but a pleasantly surprising anomaly that occurs. They develop in a fascinating way. While most coffee cherries contain two flat-sided beans nestled together, peaberries surprise us with a single, round bean. During the grading process, the peaberries are carefully separated using specific screen sizes. The exact percentage of peaberry coffee in each harvest can vary quite a bit. On average, they make up anywhere between 5% to 10% of the total coffee yield. Their little pearled-shape lends itself to more uniform roasts and contributes to an overall more pleasant and consistent brewing experience.

Once known for gold mining, São João del Rei now supports thriving coffee farms like Jaguara, thanks to its high-altitude terrain.
