Ethiopia is the ancestral home of Arabica coffee, and has exported its seedlings and beans to the world for centuries. For Ethiopians, coffee is far more than a beverage; it is a cultural cornerstone defined by rituals that long predate the invention of espresso. To this day, the country’s coffee culture remains unique, driven by a community of smallholder farmers growing indigenous heirloom varieties across diverse altitudes and microclimates.
In the southern highlands of the Gedeo Zone, the Gedeb district is renowned for producing expressive coffees which are typically fruit-forward, or floral and tea-like. Often grouped within the broader Yirgacheffe region, Gedeb’s unique growing conditions and traditional farming methods yield high-quality harvests, year after year.
This coffee, roasted by Origin, comes from the largest coffee processing hub in Gedeb, the Lalesa Washing Station, situated at 2,150 masl. Operated by Ephtah Specialty Coffee, Lalesa supports roughly 900 local farmers who cultivate heirloom varieties using organic, sustainable practices. Once delivered, cherries are float-sorted for density before undergoing a ‘Black Honey’ process. The cherries are de-pulped and dried on one of the station's 400 raised African beds with the mucilage intact for up to three weeks.
