When it comes to brewing coffee, one of the most important extraction variables is the temperature of your brewing water. Broadly speaking, hotter water increases extraction and colder water does the opposite. Depending on the particular coffee you’re brewing with, its roast level, processing and unique flavour profile, you may want to brew with hotter or colder water. It may sound pedantic to the uninitiated, but the difference a few degrees can make to your brew can be striking.
