Indonesia’s coffee story is undergoing a radical transformation. While the archipelago has been a coffee powerhouse since the 1700s, it was long dominated by high-volumes of commodity-grade Robusta. Today, a new wave of specialty coffee entrepreneurs and producers experimenting with post-harvest processing are reclaiming parts of the Indonesian islands for high-quality Arabica beans. 

Our friends at Quaffee have painstakingly searched high and low for a quality Asian lot to add to their offerings. This Indonesian specialty coffee, from producer Hendra Maulizar of team Pegasing in Central Aceh, is the result of that careful selection. Maulizar strays from the traditional Indonesian employment of a semi-washed method, also known as Giling Bisah, by experimenting with anaerobic fermentation, such as with this lot of TimTim & Gayo Arabica beans. TimTim is a naturally-occurring hybrid of Arabica and Robusta, discovered in the 1940s on the island of Timor. Sometimes known as HdT (Hybrido de Timor), this variety has both the hardy, disease-resistant properties of Robusta, with the flavour qualities of Arabica.

Through partnerships with green traders like Falcon Specialty, and a global exchange of knowledge with Brazilian, Colombian and European producers, Sumatran producers like Hendra are proving Indonesia has the capacity to produce world-class microlots that challenge what you think you know about Indonesian coffee.

“This Sumatran Hendra Maulizar Pegasing we sourced from And Sons who pulled it from Falcon Specialty's SPOT stock.

“Hendra of Team Pegasing continues to refine his processing, recently building a new wet mill and experimenting with vacuum-sealed anaerobic lots. In East Java, Kevenka, run by brothers Kevin and Kenny, works with 400 farmers under shade-grown systems, intercropping coffee with beans and chillies to diversify income.

“They source cherry from 70 farmers around Panta Musara and deliver it to their wet mill, where they assess and select for quality. After selection, they place the best cherries in sealed bags and ferment them for 48 hours. They then dry the cherries on raised beds under shade for 20 to 25 days, hull them, and prepare them for export. This method ensures consistency and highlights the potential of these indigenous varieties.”
