The Toddy® Cold Brew System is a pioneering cold immersion coffee brewer. Invented in 1964 by Todd Simpson after discovering cold-infused coffee on a trip through South & Central America, the Toddy was designed to be straightforward and consistent. While it has been a household staple for coffee lovers in the USA for over half a century, we’ve always been thrilled to champion it here in South Africa. We firmly believe the Toddy system remains one of the best and most reliable ways to make large batches of delicious cold brew right in your own kitchen.

The Toddy® Home Cold Brew System is an all-in-one immersion cold brew coffee maker. In place of heat or pressure, the Toddy relies on time to extract flavour. This classic system consists of a plastic brewing container with a handle, a thick reusable felt filter, a small rubber stopper, and a glass decanter for storing your finished cold brew. Steeping coarsely ground coffee in cold water for 12 to 24 hours produces a smooth, low-acidity coffee concentrate. This can be diluted with cold water or milk over ice for a traditional cold brew, or combined with boiling water to make hot coffee.

The suggested recipe below yields roughly 1.1 litres of coffee concentrate at a time. Thanks to the included 1.5-litre glass decanter, you can store your brew for up to 2 weeks in the refrigerator. If you enjoy regular cold brew, Toddy is a reliable, time-tested system that is not only easy to use but also great for experimenting with different brewing variables according to your taste.

How to use the Toddy® Cold Brew System

To brew with the Toddy, start by inserting the reusable rubber stopper securely into the hole at the bottom exterior of the brewing container. Dampen the reusable felt filter and fit it inside at the base of the container. Pour 200ml of water into the bottom, followed by 170g of coarsely ground coffee. Gently pour 700ml of water over the grounds in a circular motion. Add the remaining 170g of ground coffee, wait 5 minutes, then slowly pour a final 700ml of water in a circular motion (1,600ml total water). Do not stir; gently press down on the top grounds with the back of a spoon to ensure all coffee is fully saturated. Allow it to steep at room temperature for 12 to 24 hours. Once brewing is complete, remove the stopper and let the concentrate drain through the filter into the decanter. This yields roughly 1.1 litres of cold brew concentrate that stays fresh in the fridge for up to 2 weeks. Dilute 1 part concentrate to 2 or 3 parts water or milk to serve. Rinse the felt filter with clean water and store it inside a sealed container in the freezer between uses.

This is based on a suggested starting recipe from Toddy but you can experiment with your variables and try many different recipes.
