While South American coffee giants Brazil and Colombia dominate in terms of volume, Peru is one of the world leaders in organic coffee. Peruvian coffee producers with smallholdings within the unique microclimates of Chanchamayo, Cajamarca, and San Martín, have long eschewed synthetic chemicals in favour of traditional, canopy-grown farming. By formalising strict organic certification, local cooperatives bypass the commodity market to secure higher price premiums. Every Arabica tree grown not only protects the delicate biodiversity of the Andean ecosystem but directly funds the infrastructure and livelihoods of the communities who cultivate it.

Founded to give local coffee farmers a stronger voice, greater participation, and direct access to funding, Aromas Del Valle is a coffee cooperative that operates in Peru's northern region of Cajamarca. Led by Iván Cruz Rivera, who combines agronomic expertise with operational leadership, the Aromas Del Valle team partners with the Progreso Foundation to provide a complete support model. By pairing management training with targeted technical assistance, Progreso helps smallholder farmers boost both crop yields and cup quality. The result is a reliable output of sustainably-grown specialty varieties, like Caturra, Bourbon, and Geisha.

Flavour: Full & rich, Lemongrass, black tea

“This coffee was cultivated at a remarkably high altitude of over 2,000m ASL, producing hard, high-density beans. The slow maturation of the coffee cherries at this elevation allows for greater complexity to develop within the fruit.

With density in mind during roasting, we gradually increase the temperature in carefully controlled stages to ensure even heat penetration to the center. Following a measured ramp-up to first crack, the beans enter a gentle development phase, caramelising the sugars enough, highlighting the lot’s natural sweetness while preserving its distinctive malic fruit character.”

“The Aromas Del Valle Collective, founded in 2021, brings together around 300 dedicated smallholder farmers who focus on microlots and community blends from family-run farms. Through close collaboration, members share farming techniques and knowledge to improve both their cultivation and cup quality.

This lot was developed in partnership with the producers of Aromas Del Valle and our sourcing partners at Nordic Approach. It is a regional blend that showcases the unique profiles and processing styles of producers in Cutervo. Many contributing producers use ‘Frutas Maduras’ processing, a method that allows cherries to fully ripen before fermentation. This approach enhances fruit sweetness, adds layered complexity and depth, defining the signature cup profile of this lot.”
