For decades, Colombian coffee has set a global benchmark for balanced, full-bodied offerings. While the South American nation's beans were traditionally enjoyed in blends with classic cup profiles, a new wave of innovative processes has modernised Colombia's coffee landscape. Using rigorous biochemical controls, pioneering producers have developed repeatable methods involving precise drying techniques and multi-stage fermentations.

The latest Colombian offering from Origin Coffee Roasting features a Yellow Bourbon micro-lot grown and processed by Néstor and Adrián Lasso at Finca El Diviso. Founded 27 years ago by José Uribe Lasso, the family-run farm has evolved into a premier specialty coffee enterprise. Situated between 1,780 and 1,900 metres above sea level in Colombia's Huila region, El Diviso cultivates an array of rare cultivars including Ají, Pink Bourbon, Sidra, and Gesha. Néstor's innovative lots regularly feature on global competition stages. For this offering, the cherries underwent an extended fermentation, combining whole-cherry oxidation with submerged fermentation finished with a precise thermal shock treatment.

"Pitalito sits in the southern part of Huila, one of Colombia's most important coffee-growing regions. The area forms part of the Andes and benefits from fertile soils, varied microclimates, and high-altitude growing conditions that favour slow cherry maturation and the development of sweetness and complexity.

"Pitalito is also one of Colombia's leading coffee-producing municipalities, with specialty coffee playing an important role in the local agricultural economy. Huila's coffees are recognised for their balanced profiles, pronounced sweetness, acidity, and fruit-driven character."

"Finca El Diviso is a specialty coffee produced by brothers Néstor and Adrián Lasso in Pitalito, Huila, Colombia. The family-run farm has focused on specialty coffee production and developing innovative processing methods, with the brothers experimenting with fermentation to bring out distinctive characteristics in the cup.

"This lot combines an anaerobic natural process with aerobic fermentation, allowing the coffee to develop greater depth and complexity while preserving the expressive fruit character of the cherries. Their careful approach to processing reflects the Lasso family's commitment to producing distinctive, high-quality coffees."
