Inspired by the art of Japanese paper folding, relative newcomer to the industry, Origami has already left an indelible mark on the specialty coffee world with its unique drippers. Since 2019, competition brewers have impressed sensory judges on the World Brewers Cup stage using both the porcelain and resin versions. Enthusiasts attribute this success to the dripper's vertical creases, which promote a fast flow rate. The upshot is the ability to push extraction parameters, like grinding finer, without the fear of a stalled brew. Not only are they versatile, but we have to admit that when it comes to aesthetics, Origami drippers are unique.

The Origami Pinn Dripper is a new take on the original Origami Dripper and was developed alongside Yasuo Ishii, the roaster behind Tokyo's Leaves Coffee Roasters. It is designed for brewers wanting to approach light roast coffees with a shorter total brew time. The result is a dripper specifically engineered for quick and balanced extractions using small doses of coffee (up to 15 grams). With a reduced diameter compared to the standard Origami dripper, the Pinn creates a narrower coffee bed that leads to a faster drawdown. The name Pinn is derived from “pinnacle,” which refers to a mountain peak or summit, embodying the drive to reach the heights of flavour extraction.

About the Origami Pinn Dripper

Origami’s Pinn is a 1-to-2-cup dripper that employs a 55-degree angle, as opposed to the 60-degree angle found on the original Origami Dripper and many other cone drippers like Hario’s V60. This narrow slope reduces the time it takes for water to evenly saturate the coffee bed. This not only promotes uniform water distribution but also limits the likelihood of under- or over-extracting your brew. While the original Origami has 20 deep folds along its internal wall, the Pinn instead features 10 evenly spaced, fan-shaped internal ribs. The mix of flat surfaces and grooves creates clear pathways for air to bypass the filter, as well as areas of paper contact, promoting a fast water flow rate through the coffee bed and making the Pinn highly resistant to clogging or stalled brews.

The Pinn Dripper’s porcelain body is thicker than standard ceramic Origami models, an intentional design choice that moderates the rapid rise of thermal mass at the start of your brew. The thick walls then retain heat, steadily dissipating it throughout the rest of your extraction. Standing lower than the original at just 60mm tall, the Pinn allows you to drop the spout of your kettle close to the coffee bed. This provides precise control over water agitation, reducing unwanted turbulence for a more balanced cup. Notably, the internal diameter of the bottom hole is 28mm. This is larger than typical cone-shaped brewers, and was chosen through repeated testing to facilitate consistent extraction speeds.

The Origami Pinn Dripper includes a dedicated Pinn Dripper Jig, which is designed to help you shape the angle of your cone paper filters to fit the narrower 55-degree cone. Please note that the jig is sold exclusively with the dripper and is not available for separate purchase.
