For generations, Colombian coffee was defined by large-scale batches of commodity-grade washed coffees, long favoured for their classic, dependable flavour profiles. Over the last decade, however, Colombia’s coffee narrative has shifted toward innovative processing techniques and exotic varieties. This transition from traditional to experimental has empowered producers like Elkin Guzman in Huila to find cutting-edge ways to showcase the distinct characteristics of coffees such as Bourbon, Tabi, and Gesha, among others.
Grown and processed at Elkin Guzman’s 32-hectare farm, Finca El Mirador, this single-origin release from Origin draws on generations of Guzman family knowledge. Elkin dedicates his time to researching and testing innovative post-harvest methods, such as his signature dark room process. For this lot, the El Mirador team uses a continuous 24-hour drying cycle: after a short, submerged fermentation, the Striped Bourbon cherries are moved into an airtight, darkened drying chamber equipped with precision climate control. By eliminating outside weather fluctuations and drying the coffee slowly over 12 to 15 days, this lot yields a distinct clarity and vibrancy that stand out compared to traditional-process coffees.

“This Striped Bourbon is a distinctive specialty coffee produced by Elkin Guzman at Finca El Mirador in Huila. Striped Bourbon is a rare coffee variety recognised by the characteristic stripes on its ripe cherries.
“Elkin is known for his experimental approach to processing, and this lot is naturally processed, allowing the coffee to dry in its cherry and develop pronounced fruit character and sweetness. This particular coffee is noted for flavours of orange, kiwi, grape and a delicate tea-like quality.”

“Finca El Mirador is a roughly 31–32 hectare farm in Huila, with most of the land dedicated to coffee and a diverse collection of varieties including Striped, Orange and Pink Bourbon, Tabi, Mokka and Gesha.
“Elkin Guzman comes from a family with more than 70 years of experience in coffee and has spent over a decade researching fermentation and post-harvest processing. The farm's high-altitude conditions, together with Elkin's precise processing methods, allow each variety to express its distinct characteristics.”
