For decades, Colombia has set a global coffee benchmark, traditionally enjoyed both in blends and as single origins that offer balanced, full-bodied cups. While many still favour these classic profiles, a new wave of innovative processes has modernised Colombia's coffee landscape. Using rigorous biochemical controls, pioneering producers have developed repeatable methods involving precise drying techniques and multi-stage fermentations.

Finca Monteblanco, a family-run farm in San Adolfo, Huila, is known for producing micro-lots that are consistently selected by competition brewers. Managed by Rodrigo Sánchez Valencia and Claudia Samboni, Monteblanco's high-altitude climate is uniquely suited to the cultivation of exotic coffee varieties including this washed lot of co-fermented Purple Caturra.

The farm's intensive hand-sorting stage ensures that lots selected for fermentation are composed of only the ripest cherries. Using a cultured yeast blend developed with lemon and mint infusions, this coffee was carefully co-fermented inside sealed tanks for 150 hours. After processing, Finca Monteblanco's coffees are milled and prepared for export at the state-of-the-art Aromas del Sur dry mill, just outside Pitalito.
