While Uganda is home to indigenous Robusta trees, its history of Arabica cultivation dates back only about a hundred years. Despite political and social unrest during the 20th century, today there is a clear rise in the volume of specialty-grade Arabica coming out of the East African nation. In particular, farms around the foothills of Mount Elgon are increasingly celebrated for producing fruit-forward lots with enjoyable flavour profiles.
Sipi Falls is an area in eastern Uganda, renowned for its waterfalls and panoramic views. Thanks to its high elevation, cooler temperatures, and abundant rainfall compared to the surrounding plains, the Arabica coffee grown here develops a distinct sweetness and complex flavour profile. The washing station at Sipi is managed by the Zukuka Bora Coffee Company, which works directly with local smallholder farmers to produce specialty lots for export. Today, coffees processed at Sipi remain among Zukuka Bora’s most popular offerings.
Origin Coffee Roasting has released two coffees from Sipi Tangwen for you to try. Both coffees were grown in the same region from Kenyan-heritage SL28 and SL34 varieties and processed at the same washing station, offering a direct look at how processing shapes flavour: this lot underwent an anaerobic natural process, while its companion underwent an extended 92-hour fermentation as part of its washed processing.
Origin’s notes
“Sipi Tangwen is a specialty Arabica coffee produced by smallholder farmers in the Tangwen community. The cherries undergo a 72-hour anaerobic fermentation before being dried whole, a process that encourages pronounced fruit character while retaining the sweetness of the natural process.
“This lot presents notes of guava, tropical fruit and plum, creating an expressive and fruit-forward cup.”
- Flavours: Guava, tropical fruit & plum
- Body: Syrupy
- Acidity: Vibrant wine-like
- Roast: Medium
- Brewing: Chemex, AeroPress, siphon, espresso & milk-based, cortado
