Once your coffee is dialed in and your espresso recipe is laid out, the next step for any barista is the all-important puck preparation. As the most active step in the espresso process, ensuring an even distribution makes a massive difference in the quality of your shot. An unevenly distributed puck can lead to channeling and extraction issues that negatively affect the taste of your coffee. To ensure that your coffee is perfectly distributed before tamping, you can rely on the Weiss Distribution Technique (WDT) and the mechanical Spinosa WDT tool from Presso.
The Presso Spinosa is a mechanical WDT tool that rests over your portafilter after dosing your ground coffee. Before tamping your coffee, the spinning needles penetrate the bed to eliminate the risk of channeling by removing air pockets and clumps. As a mechanical WDT tool, the Spinosa avoids the pitfalls of "manual" wire tools, such as uneven distribution patterns or spilt coffee. The Spinosa magnetically attaches to your portafilter, and with its fixed central column, quickly and uniformly distributes your grounds for an even extraction and a delicious espresso.
About the Spinosa WDT Tool
The Presso Spinosa is a mechanical WDT tool for home baristas. While it snugly fits on top of standard 58mm portafilters, it requires a firm finger placed on the collar to keep it in place whilst spinning. To adjust the needle depth of the Spinosa, twist the top and lower parts of the handle in opposite directions to unlock the central column. Use the height of the lower handle part to determine how far the needles will depress. Lower the handle for single-dose (7–9g) baskets, raise it to the mid position for double-dose (14–18g) baskets, or raise it fully for triple-dose (18–22g) baskets.
