Across the high-altitude coffee-growing regions of Huila, Tolima, Nariño, and Antioquia, an ecosystem of producer groups, cooperatives, and quality-driven exporters forms the backbone of Colombia’s specialty industry. In the Central Andes, Antioquia is defined by rugged mountain terrain paired with lush green valleys. From Jericó to Ciudad Bolívar, the region’s steep slopes are famous for producing balanced, crowd-pleasing coffees—a reputation built on volcanic soil and time-honoured cultivation practices.
This fully washed Colombian coffee was roasted by our friends at Rosetta. It comes from Gabriel Jaramillo, a coffee producer carrying on his family’s farming tradition in Ciudad Bolívar, Antioquia. Across Finca Santa Isabel, one of three family-owned farms operated by the Jaramillo family, high elevations and steady mountain microclimates deliver coffees that offer classic Colombian comfort. “Our approach focuses on preserving clarity and vibrancy while developing sweetness, qualities for which Colombian washed coffees are highly sought after.
“Both Colombia and Castillo varieties can produce expressive, balanced cups, so we maintain a steady rate of development through the roast before allowing enough time after first crack to preserve the lot’s structure and flavour definition. This approach allows the coffee’s sweetness to fully develop without sacrificing its fruit brightness, resulting in a cup that is clean, lively and well balanced.”

“Santa Isabel is one of three family-owned farms operated by the Jaramillo family, alongside El Coco and Buena Vista, in Ciudad Bolívar, Antioquia, a mountainous region with a long history of coffee production. This lot was produced by Gabriel Jaramillo, a third-generation coffee grower who continues his family’s work across these farms alongside his wife, Luz Marina Moncada, and their family.
“While the Jaramillos come from a traditional coffee-farming background, they have increasingly embraced specialty coffee and more quality-driven approaches to production. This transition has been influenced in part by Gabriel’s friendship with Juan Saldarriaga, a pioneer of experimental and quality-focused coffee production in the region.”
