Ethiopia’s Yirgacheffe zone produces some of the most sought-after coffees in the specialty industry. Across the high-altitude Gedeb woreda, subtle shifts in microclimate create distinct sweet spots where growing conditions are near perfect. Here, in a part of coffee’s ancestral homeland, Gedeo farming families cultivate indigenous heirloom varieties alongside resilient cultivars developed by the Jimma Agricultural Research Centre—pairing generations of traditional knowledge with enviable terroir.
This naturally processed lot was grown by smallholder farmers in and around Halo kebele (village), who deliver their cherry harvests to the Halo Beriti washing station for sorting, grading, and processing. This coffee was sourced through a partnership between Boledu Coffee, Halo Beriti's operator, and exporter SNAP. This network grants local producers direct access to vital processing infrastructure and international markets, ultimately bringing us high-quality small-lot single origins like this one.

“When roasting this natural Ethiopian, we apply a gentler approach than we would typically use for a washed Ethiopian. The softer density of the naturally processed coffee means we avoid driving the roast too aggressively, allowing the coffee to develop evenly.
“We aim to preserve its delicate fruit character and floral aromatics while building enough development for maximum sweetness. A measured approach throughout the roast helps retain the coffee’s expressive fruit qualities while keeping the cup clean and complex.”

“Halo Natural comes from Halo Beriti in Gedeb, within Ethiopia’s Gedeo Zone, an area also known as Yirgacheffe. The coffee is produced by around 700 smallholder farmers at 2,000–2,100 m ASL and naturally processed at the Halo Beriti washing station.
“The station works with SNAP Coffee, whose approach focuses on consistent specialty processing, farmer training and waste recycling. SNAP also supports local communities through initiatives including providing technology to schools and improving road access in remote farming areas.
“This certified organic coffee combines heirloom varieties, high-altitude cultivation and natural processing to produce its expressive fruit character.”
