This is an extra-special limited edition coffee roasted by Truth. Coffee Roasting, an exciting blend of coffees from Papua New Guinea. We don’t get coffees from Papua New Guinea often at all, but we do know that the Oceanic island nation is famed for producing some superb specialty coffees.

Papua New Guinea is a unique coffee origin. 85% of the coffee it produces is grown by smallholder farmers on plots more suitably referred to as “coffee gardens” than farms. Many of these farmers process their crop in their homes using manual tools, in contrast to the machinery used in larger scale operations, and those that don’t sell their coffee cherry to local mills instead. Historically, Papua New Guinea’s farmers have struggled to form cooperatives due to the geographical barriers between them as well as the incredible diversity of their tribal groups and languages.

This particular lot comes from the Sigiri Coffee Estate, the largest coffee plantation in Papua New Guinea, and was processed at its eponymous Sigiri washing station. Sigiri belongs to Carpenter Estates, and is located in the Wahgi Valley, found in Papua New Guinea’s Western Highlands. The region is characterised by high altitudes, thick foliage and rich, volcanic soil courtesy of the nearby stratovolcano, Mt Hagen. These provide the ideal conditions for coffee cultivation. 

Moreover, Sigiri is committed to preserving the environment that enables its work by eschewing the use of any pesticides or herbicides in its production. It also implements a natural shade strategy utilising two types of “shade trees” that not only mitigate the impact of heavy rain, wind and sunlight on the coffee plants, but also provide a habitat for over 90 native bird species. 

Sigiri holds its crop to the highest standard, and employs a rigorous quality control process. Through numerous sorting, inspecting, and selection processes, Sigiri ensures that only the best of its harvest eventually makes its way into your cup of coffee. Truth’s notes

“Cherry is selectively hand-picked and brought to the wet mill for its first flotation and cleaning. Cherry is processed on the day it is picked. Three 24-hour fermentations occur in ceramic tile-lined tanks. Each is separated by a quick wash that limits any over-ferment notes and freshens the water. Once complete, the beans are soaked for another 24 hours before making it to patios for a 10 -14 day sun drying. The parchment coffee is then conditioned for 21 days before hulling and export.”
